Tropical Peanut Butter Dipping Sauce

  • ¼ cup creamy peanut butter
  • ¼ cup apricot fruit spread/jam/jelly/preserves
  • ¼ cup tropical fruit juice (papaya, mango, orange-mango)
  • ¼ teaspoon orange zest
  • Fresh cilantro (optional garnish)

Mix peanut butter, jelly/jam, juice and orange zest in a small saucepan over medium-high heat. Stir until the mixture starts to bubble. Remove from heat. Makes about ¾ cup sauce/dip.

This can be served as a dip for fresh fruits and vegetables or as a dipping sauce for grilled meats and fish or a sauce for appetizers such as satay or mini meatballs/sausages.
