Slow Cooked Corned Beef and Cabbage

  • 4 LG carrots, peeled and cut into chunks
  • 10 small red potatoes, quartered
  • 1 onion, peeled and quartered
  • 2 C water
  • 1 4lb beef brisket with spice packet
  • 6 oz of stout beer- I used Sun King Ring of Dingle
  • 1/2 head of cabbage, quartered

In the bowl of a slow cooker layer the brisket (sprinkle with the spice packet), potatoes, carrots and onion. Pour water and beer over the top. Cover and cook on high for 8 hours. 1 hour before done add the cabbage to the top. Remove, shred or slice the beef, and serve.
